Tex-Edit Plus
My favorite text-editing and all around utility application is Tex-Edit Plus, or as I call it -- SimpleText on Steroids! Created by Tom Bender, it can do many great text editing functions. For plain old text entry, it's really fast, since it loads into RAM, and it won't hit the drive unless you save the document.

As a Powerbook user, you might like to know that since it loads your whole text file into RAM, you can really cruise for a long time on battery power.

Of course you don't have a built-in spell checker, but you can write in Tex-Edit Plus on the road to save battery, then dump your documents into a full-featured word processor to check spelling at a later time. It's good incentive to just write, since there are no button bars or gadgets to get in the way, and you don't even think about spelling until you are finished. You may also choose to investigate an external spell-checker, such as SpellTools or SpellCatcher if you would like these features while using Tex-Edit Plus.

Tex-Edit Plus also has the ability to save text documents in many popular word processing formats, like Word, WordPerfect, MacWrite Pro, Nisus -- or you have the option of typing in your own creator codes with an 'other' feature -- potentially handy for certain occasions. It comes in especially handy for opening/cropping PICT files and recording, opening and saving Mac sound files.
